Carrot burgers are something my beloved grandmother made me when I was living with her during high school years. She passed a few years ago at the age of 97 having lived a fulfilling life. She never complained about little things and was happy all the time. I never got to write down her carrot burger patties recipe so I’ve been trialling different ones over the past few years. I think this version is pretty good and healthy too. You can eat these veggie patties straight from the pan with a side dish such as fried egg rice, or cold as a snack.

kcalThe best vegetarian and gluten-free carrot burger patties for a healthy and low calorie diet. Can be eaten eaten straight from the pan with a side dish such as fried egg rice, or cold as a snack.
Ingredients
3 medium carrots, washed and thinly grated
1/2 can of drained chickpeas
1 egg
1 large garlic clove, chopped
1/2 onion, chopped
1 tbsp gluten-free breadcrumbs or not too fine corn flour
1 tbsp gluten-free potato starch
1 tbsp gluten-free soy sauce
Ground black pepper
Dried rosemary
Dried thyme
Olive oil for frying
Directions
- Process the chickpeas in a food processor into a crumbly texture. Mix it together with all the other ingredients in a bowl. Let it sit for a few minutes.
- Heat the oil in a frying pan. Form the mixture in a tablespoon into a palm-sized ball, place onto the pan and press it into a flat burger shape. Repeat with each burger.
- Fry the first batch of burgers on one side for about 5 minutes or until desired colour, turn around and fry on the other side just as long.
- Serve immediately with a side dish for lunch or dinner.
