Homemade mayonnaise

This is the easiest homemade version of the thick and delicious cold sauce called mayonnaise with only five ingredients. I must admit I find it hard to go for the shop version after I started making it at home as very often it includes gluten. So, here’s a naturally gluten free, extremely delicious homemade mayonnaise recipe that is actually very easy to make.

This is the easiest homemade version of the thick and delicious cold sauce called mayonnaise with only five ingredients.

Ingredients

  • 140ml extra virgin olive oil

  • 1 egg yolk (room temperature)

  • 1/5 tbsp cyder vinegar

  • 1/2 tsp fine sea salt

  • 1/4 tsp ground black pepper

Directions

  • Separate the yolk from the egg white and put it into the bowl (both a hand whisk or an electric whisk can be used).
  • Add the seasoning and mix well until the yolk starts to lighten and thicken.
  • Hold the whisk in one hand and the oil bottle in the other, add ONLY A DROP of oil to the mixture, mix it in very well.
  • Repeat step 3 multiple times during a few minutes. Then you can add a little bit more oil, a few more drops at a time, but keep mixing before adding more.
  • Now you should see the mixture go really thick and stiff. Add the vinegar as this will thin the mixture down. You can a add a bit more vinegar to get the desired consistency. Add more salt and pepper if needed.

Notes

  • Be patient when adding the oil. But if the mayonnaise curdles, it is best to start fresh.
