This is the easiest homemade version of the thick and delicious cold sauce called mayonnaise with only five ingredients. I must admit I find it hard to go for the shop version after I started making it at home as very often it includes gluten. So, here’s a naturally gluten free, extremely delicious homemade mayonnaise recipe that is actually very easy to make.
Homemade mayonnaise

Ingredients
140ml extra virgin olive oil
1 egg yolk (room temperature)
1/5 tbsp cyder vinegar
1/2 tsp fine sea salt
1/4 tsp ground black pepper
Directions
- Separate the yolk from the egg white and put it into the bowl (both a hand whisk or an electric whisk can be used).
- Add the seasoning and mix well until the yolk starts to lighten and thicken.
- Hold the whisk in one hand and the oil bottle in the other, add ONLY A DROP of oil to the mixture, mix it in very well.
- Repeat step 3 multiple times during a few minutes. Then you can add a little bit more oil, a few more drops at a time, but keep mixing before adding more.
- Now you should see the mixture go really thick and stiff. Add the vinegar as this will thin the mixture down. You can a add a bit more vinegar to get the desired consistency. Add more salt and pepper if needed.
Notes
- Be patient when adding the oil. But if the mayonnaise curdles, it is best to start fresh.
