kcalThis kefir cake is one of the easiest, quickest and tastiest cakes you could ever make. You can use either kefir or thicker yoghurt instead if you don’t have/like kefir.
But why is kefir good for you?
Studies suggest, kefir boosts the immune system, aids in digestive problems, and improves bone health. According to, Healthline, it may even combat cancer. Kefir is also low in lactose making the cake great for people with lactose intolerance.
Gluten-free and vegetarian.
Ingredients
2,5 dl kefir
2 dl brown sugar
4 dl gluten-free flour (FREEE by Doves Farm Plain White Flour)
1 tsp baking powder
100 g unsalted butter
1 tsp vanilla sugar or 0,5 tsp extract
pinch of salt
- For the topping
3 dl frozen berries (blueberries, raspberries)
2 tbsp sugar
1 tbsp potato or corn flour
Directions
- Preheat oven 195C/175C fan/gas 4.
- Mix kefir, sugar, flour with baking powder, melted butter, vanilla and salt.
- Line a 15 x 25 cm loaf tray and pour the dough in there.
- Mix berries, sugar and flour and pour over the dough.
- Bake for 35-40 mins.
Notes
- You can pre-bake the cake without the topping for 10 minutes, then add the topping and bake for 25-30 minutes as it sometimes may come out too wet depending on the consistency of the kefir.
